Remember this advice isn't official. There is no guarantee it will reflect your experience because university applications can change between years. Check the official Cambridge and Oxford websites for more accurate information on this year's application format and the required tests.
Also, someone else's experience may not reflect your own. Most interviews are more like conversations than tests and like, any conversation, they are quite interactive.

In my first interview, the interviewer first told me he liked my pre-submitted essay (but asked nothing about it really). I first got asked general music questions, then got played some intervals on the piano and had to identify them. I also got played a piece of music and got asked about who the composer could be. I then got a score of music to analyse on the spot and I got asked questions on it. I was finally given a piece of writing about music and got asked questions about it.
For the second interview, it was more practical and I first got asked about the preparatory work I had done before the interview (30 mins to do two harmony tasks). I did some sight-reading, some chord identification (I had to transcribe part of a piece of music that was played 3 times on the piano) and then I was given a piano score to analyse and was questioned on that.
I read (and re-read) the three books I wrote about in my personal statement. I also made notes on them and would revise my notes. I listened to a lot of music and absolutely scrutinised my personal statement and my submitted essay. I think I did quite a lot of work for my interview and read around my subject a lot - for example, short essays on music.
Read around the subject as much as possible - especially in areas you are interested in; passion and enthusiasm really shines through!
