Remember this advice isn't official. There is no guarantee it will reflect your experience because university applications can change between years. Check the official Cambridge and Oxford websites for more accurate information on this year's application format and the required tests.
Also, someone else's experience may not reflect your own. Most interviews are more like conversations than tests and like, any conversation, they are quite interactive.
Test taken:
Number of interviews: 2
Skype interview: No
Time between each interview: about 2 hours
Length of interviews: about 25 minutes each
In my first interview they asked me about the core science I had written about in my personal statement. They explained a physics problem about flowing systems through pipes and how to draw graphs. They asked my to draw a graph too.
In the second they asked me how I would sell materials science to another student, and to draw a graph. Then they asked about stress strain graphs (a lot!!) and about entropy too.
I did practice papers and revised any A level content which came up in them.
I revised the materials section of my physics course well and drew lots of funky graphs (including exponentials, trig functions, logs and strangely arranged equations). I knew about the science of the activities and projects I wrote about in my personal statement, and got used to explaining them just out loud to myself.
